2023 (Senior): Plunkett continued his success on the defensive end into his senior season. He was second on the team with 56 total tackles and 11 tackles for loss. Peyton was once again a problem for ball carriers, forcing four fumbles, which is tied for third in the GLVC for a single season. He even recovered three fumbles, had six QB hurries, two pass breakups, and recorded his first career interception against Chadron State (9/1/23).

2022 (Junior): In his first season with QU, Peyton was a force on the defensive side of the ball. In ten games, Plunkett was third on the team with 55 total tackles, led the team with 18 tackles for loss for a total of 88 yards, which were both second in the GLVC and was tied for first in the GLVC with eight sacks for 53 total yards.

Plunkett also forced six fumbles, which tied the record for most forced fumbles in a single-season in the GLVC. Peyton had a career-high 12 tackles against Southwest Baptist (11/5/22), and had a career-high three sacks against Walsh (9/17/22).

2021 (Redshirt Sophomore at NMSU): Plunkett played in nine games and recorded three tackles. Peyton also had a scoop and score after a blocked punt for his first career touchdown against Central Missouri (9/18/21).

2020 (Sophomore at NMSU): Did not see action.

2019 (Redshirt Freshman at NMSU): In his second season, Plunkett appeared in 14 games, where he recorded 14 tackles, including a 0.5 tackle for loss. His collegiate debut came against Missouri Western (9/5/19), and his first career tackles came against Washburn (9/14/19).

2018 (Freshman at NMSU): Did not see action.

Personal: Plunkett spent four years at Northwest Missouri State University before transferring to Quincy. He is originally from Palmyra, Missouri, where he graduated from Palmyra High School. Peyton is the son of Camille and Justyn Plunkett and the brother of Quade and Marney. Outside of football, Peyton loves to be with his family. His favorite athletes are Ray Lewis, Michael Jordan, and Luke Kuechly. He is also a supporter of the Miami Dolphins.
